6.)  Once chilled, use one ball of dough at any given time, and roll onto a gently floured surface.  I’ve found it really works best to position a sheet of parchment paper on the top from the dough, after which roll on the top from the parchment.  This prevents from the dough from adhering for your moving pin, so you don’t have to add just as much extra flour (while you would with no parchment).
